Streamlining Cheese Purchasing

A customer was working on a new flavor for a pasta salad application. This cheese needed to be smoked, RBST Free, and have a specialty dice size of 3/8” x 3/8” x 1”. Traditional smoked mozzarella is soft and wouldn’t be a good fit for the pasta salad application or dicing. After some digging, we were able to find them a smoked LMPS mozzarella that met their standards. The custom dice size was a little trickier, but we were able to find a converter that did the 3/8” x 3/8” x 1” size. The customer was impressed with our ability to quickly get them a product that met all their requirements and had low order minimums.
We understand that retailers often do not provide accurate forecasts. Some of our customers consistently receive rush requests / product spikes. One customer needed to have product warehoused on-site because they couldn’t risk waiting for a production lead-time or reefer sail schedule. In this case we do an on-site inventory count each week and bill them for what they use. They like this because we can manage the re-order points for them and provide historical data, trends we are seeing, etc. It’s also helpful for them to be billed in smaller weekly quantities.
A customer felt like they were overpaying for a branded product. In this case we were looking at hard grating cheeses for a variety of salad applications. The problem was that the customer already had pre-printed packaging for their products. We were able to match the spec sheet/nutritional for each cheese and the customer received their desired price point. They also like that we warehouse this product for them, so they save on valuable space.
The application is sandwiches that sit under a heat lamp after they are assembled. The customer was getting complaints that the cheese was sticking to the wrappers. In this case they needed a product that would melt while not oozing out over time. We were able to develop a processed cheese that gave them the same flavor while eliminating the sticking issue. Customer has been very pleased with this product.
